Ingredients
-Pieces of freshly cooked chicken (I used breast meat from a whole roasted fryer)
-1/2 Red Onion, chopped
-1 Poblano pepper, chopped
-1/2 cup BBQ Sauce
-1 1/2 cups(ish) Mozzarella shredded
-1/2 cup smoked cheddar shredded
-1 hand full of shredded Parmesan
-2 pieces lavash flat bread (we got ours at Trader Joes)
-2 strips maple bacon (optional, but ever so good)
Cook bacon, I chose to do mine in the oven on a broiler pan so I didn't have to worry about all the fat. Once bacon is cooked, allow to cool and then crumble
Saute poblano and red onion together in olive oil and butter until onion is nearly transparent then set aside.
Spread and even coating of BBQ sauce on each piece of flat bread, and then start assembling pizza. I started with the peppers and onions, then added the chicken, then bacon crumbles, mozzarella, cheddar and finally the parmesan last.
Cook in 350 degree oven for about 10 minutes, or until cheese is melted and crust is crispy. Let stand for a few minutes, then cut and serve.
